Yesterday I made a recipe for pancakes that had him gagging!! Actually I didn't think they were bad at all What I am looking for is maybe some kid tested/friendly recipes and tips to get us started without a huge battle. Guest guest Posted May 21, 2001 Report Share Posted May 21, 2001 Hi, My son and husband both really like this chocolate chip cookie recipe: Toll House Chocolate Chip Cookies converted to gfcf: 1 C cf margarine 1/2 C sugar 1 C Brown Sugar 1 tsp. gf vanilla Cream together. Add 2 eggs and mix well. 1 1/2 C white rice flour 1/2 C potato starch flour 1/4 C tapioca flour 1 1/2 tsp xantham gum 1 tsp salt 1 tsp baking powder 1 tsp baking soda Combine and add to egg/sugar mixture. Mix and add 12 ounces gfcf chocolate chips and 1 cup chopped nuts. Drop by rounded tablespoons onto ungreased cookie sheets. Bake at 375* for 12 minutes or until golden brown. What I do after I make the dough is to make them into rolls of dough (like slice and bake cookies in the store), on plastic wrap or parchment paper, wrap them up, and freeze them. Then I just take them out of the freezer, slice and bake, and they are done. Very easy. I would also recommend looking through the archives. Gfcf cereal crispy bars. Lots of muffin & pancake ideas. Guest guest Posted May 21, 2001 Report Share Posted May 21, 2001 Since I'm pretty new at this too (9 weeks on gfcf diet) I still buy pre-packaged pancake mix. It is Arrowhead Mills' Gluten Free pancake mix. I get it at the HFS and the girls like the pancakes! But it is expensive, so I'm going to have to start making my own.
