I think it would be fine in a chocolate or other flavored & colored frosting, but as a white frosting, it had a peculiar translucent look to it when I frosted even a white cake with it. You could see the cake right through the frosting. I don't remember the recipe I used, but it was probably a buttercream. Something with a little substance in it might work better. The flavor wasn't the issue, you don't really taste the coconut in coconut butter (the way you do with coconut milk.) If using coconut is what you want....There is a coconut chicken recipe in one of Bette Hagman's cookbooks. You can make your own coconut ice cream with coconut milk. You can use it in baking. You can make milkshakes. Just be sure to buy unsulphited coconut milk; I use Thai Kitchens brand, but I think Trader Joe's carries an unsulphited one as well.
