Refrigerate it the day ahead so it can season through. 6-8 new red potatoes, cooked, peeled and cut into small pieces 4 hard boiled eggs (if tolerated), peeled and chopped into small pieces Green onion to taste (I like lots) Miracle Whip (about 1 cup) Mustard (Mom uses French's) Toss potatoes, eggs, and onion together. In separate bowl, combine Miracle Whip with enough mustard to make a pale yellow color, or to taste. Pour over potato mixture and fold gently. Enjoy!
