Guest guest Posted January 16, 2008 Report Share Posted January 16, 2008 You can make most cake recipes dairy-free/casein-free by substituting an acceptable fat for the butter that most recipes include: --there are DF/CF margarines if you can have soy --Spectrum vegetable shortening (100% palm oil) There are lots of GFCF mixes out there, and my kids do like them, but I can tell the difference. I have used the Gluten-Free Pantry mix -- make sure you get one that is DF/CF. Some have dairy! My sister buys Namaste brand mixes, and she swears they are the best ones out there. I haven't found them near me yet. If you eat gluten, I think you will get a more authentic taste out of a scratch recipe cake. If your child is a chocolate lover and/or flexible, brownies make a great substitute for birthday cake. And they're easier on the chef, too! I recently posted a recipe for super-fabulous brownies. If you can't find it in the archives I can post it again. The only ingredient to be careful of is chocolate chips -- make sure you buy DF/CF chips. I have found Ghiradelli semi-sweet ones that are delish and DF/CF, but if you want to be double-safe about cross- contamination, buy Enjoy Life brand or another allergen-free brand. in NJ > > DD's birthday is this week, and I'd like to have a cake for her.
