Vivace, Proud 25.5yo w/Asperger's Syndrome & Dysthymia Blessed Mother of , almost 6yo w/Autism, " Heaven's Joy, " and lots of energy Gingerbread Pear Upside-Down Cake 1/2 cup margarine 2 to 3 large eggs 2/3 cups molasses (un-sulphured) 2 cups white corn flour 1 1/2 tsp baking soda 1 tsp ginger 1/2 tsp each cinnamon and nutmeg 1/4 tsp cloves 1/3 cup water or liquid off canned pears 1 1/4 cup grated raw apple or pear 1 can (drained) sliced pears (packed in water not syrup) Butter & brown sugar Cream margarine, eggs and molasses well. Combine the dry ingredients and add alternately with the water/pear liquid to the margarine mixture. Stir in grated apple or pear. Spread 1/4 cup of soft margarine in the bottom & edges of a deep dish 10 " round pan (I use my angel food pan with the center ring removed), on top of margarine spread 1/3 cup brown sugar and place sliced pears. Pour in cake mix over top. Bake at 350 degrees for 40-50 minutes. Once out of the oven immediately and carefully invert onto serving plate, any fruit that sticks to pan lift out and place back on cake.
