Pizza Crust #2

1/4 c. milk (a milk substitute could be used)

2 large eggs (or egg substitute)

1/3 c. cornstarch

2/3 c. rice flour

optional: 1/4 teaspoon xanthan gum

1 tsp. salt

1/4 c. shortening, melted

Combine milk and eggs. Add flours, xanthum gum, and salt. Mix in melted

shortening. Mixture will be the consistency of a corn bread mix. Spread

into a greased 9x12 pan. Spread sauce on top and add your choice of

toppings. Bake at 400 degrees for 20-25 minutes. Makes 6 servings

Gluten Free Pantry has individually wrapped pizza crust from

Kingsmill. My daughter likes them and we use them like pita bread

sometime too. They are a little bigger than reg. pita bread and sell

for 2.69 per crust (I think). Any way they work better for us

because they are individually vaccuum sealed.
