Hubby had said last week he was feeling sad because he remembers as a kid in the summer going for onion rings. So I got out the deep fryer and did it with success. I posted this recipe not that long ago, but thought it worth posting since we tried it with onion and they were really good. Better than the last batch of gluten ones I got on a night out without the family. ;-) Enjoy! Joyce --------------------------------------------- Batter for Chicken Fingers and Onion rings (I used Vadalia) 1 cup Sorghum Flour (I purchase at www.twinvalleymills.com ) 1 TB. Baking Powder 1 egg white Salt Spice ( I used about ½ teaspoon of Trader Joe's 21 Seasoning Salute) * Thin out with Seltzer water until thin pancake like batter. (I used lemon flavored) Dip chicken and onion rings into the batter and deep fry in a " Fry Daddy " or other deep fryer. (I used safflower oil) I tried to do this in a pan, but I just couldn't keep the oil at the right temperature. *Onion, Black pepper, Celery seed, Cayenne Pepper, Parsley, Basil, Marjoram, Bay Leaf, Oregano, Thyme, Savory, Rosemary, Cumin, Mustard, Coriander, Garlic, Carrot, Orange Peel, Tomato, Lemon juice powder, Oil of Lemon, Citric Acid.
