Guest guest Posted May 20, 2001 Report Share Posted May 20, 2001 2 cups gfcf corn flakes 3/4 cups pitted dates 1/2 cup pecans or walnuts (you could probably use any tolerated nuts) 2 tablespoons honey 2 tablespoon gfcf margarine, softened 2 teaspoons lemon juice 3 tablespoons sugar or gfcf confectioner's sugar (optional) Put the cereal, dates and nuts into a blender or food processor, and blend until just well chopped. Or crush the creal with our hands, and chop the dates and nuts with a knife. In a mixing bowl, combine the cereal mixture with the honey, butter and lemon juice. Knead until well mised, then roll into 1-inch balls. Sprinkle the sugar on a sheet of wax paper, and roll the balls in the sugar (optional).. Store in an airtight container. Enjoy!
