It's from the book Eet Smakelijk, that's Dutch, published by the Holland, Mi junior league. To give credit where credit is due, it's Mrs. Stuart Padnos' recipe One Pot Brownies 4(1 oz each) squares unsweetened chocolate 1 cup margarine 2 cups sugar 4 eggs 1 1/2 cups flour 2 tsp. vanilla 1 cup nuts, chopped and/or 1 cup raisins (optional) Preheat oven to 375F. Grease 9 x 13 pan. In a heavy pot, melt chocolate and margarine. Cool slightly. Add sugar and eggs, mixing well. Beat in flour and vanilla. Stir in nuts and raisins. Pour in baking pan. Bake for 20-25 minutes. Do not over bake. Cut while warm, not hot. What I did was to use cocoa rather than chocolate. I would suggest checking your cocoa to see what they suggest for a substitute. My book had said 1/4 cup cocoa and 1/2 tablespoon fat but my container of cocoa had different proportion so I go by the container. Since I use margarine in the recipe I usually use Crisco for the fat. I used Bette Hagman's mix and of course gluten free vanilla. I also add a little over a teaspoon of xantham gum.
