Guest guest Posted June 7, 2001 Report Share Posted June 7, 2001 Here is how I make chicken nuggets for my little guy (Josh, almost 3, ASD): ground or tenderized chicken (makes nuggets more tender than just regular breast meat) " Hol-Grain " brand Brown Rice Bread Crumbs (GF/CF - only ingredient is medium grain brown rice) I get them at our HFS (the manufacturer is Conrad Rice Mill, Inc. in Louisiana) beaten egg for coating before breading any gf/cf seasoning for the bread crumbs to suit you or your child's taste oil of choice for frying - I use corn because Josh doesn't have a problem with it I just mix seasoning with the bread crumbs, coat the chicken with the egg, bread the chicken, and fry them. You could substitute something else for the egg if that is a problem. They are pretty easy. I've tried them and like them and Josh is eating them.
