I would like to hear your comments on this as you are very knowledgeable on everything. Both in " Special Diets for Special Kids " and " Unraveling the mysteries......... " it is mentioned about the many options available for when a recipe calls for butter. I just feel if we all went this far and want to be 100% GFCF then why would we use butter. I have my son on this diet for 1 year and 2 months and he is doing excellent, super on this diet (along with his schooling, tutor and my work with him), but I know he is 100% GFCF and some of my other acquaintences who tried this with their children, and feel there wasn't progress with the diet, didn't go through all the baking and special buying and sacrifices that this diet brings with it. Heck, life would be so much easier for me if I gave all these little easy ways out, but life would be easier for me - not him.
