My little guy loves p-nut butter, but his allergy tests just came back and he's p-nut sensitive. Want to try almond or cashew butter, but need some guidance. Anyone got a recipe? How to >store and how long does it keep without preservatives? > I use dry roasted salted almonds (Trader Joe's sells them) and while they are processing I add about 1 Tbs.. Safflower Oil. It takes a while for the nuts to release their oils, so you process for quite a while. When it is almost finished processing I add about 2 tsp. of confectioner's sugar. The longer you process it, the smoother it will be. I then refrigerate it in a plastic tub. We usually use it faster than it can spoil, so I don't know how long it will last.
