Nitey Night Cookies 2 egg whites 3/4 c. white sugar 1 c. chopped pecans (optional--I didn't use them) 1 c. semisweet chocolate chips (I only had about 1/2 c.--I grated it so it would disperse more evenly--This ended up being a crispy outer meringue with an almost liquid chocolate filling--Yummy!) Preheat oven to 350 degrees. Grease cookie sheet(s). Beat egg whites with electric mixer until soft peaks form. Gradually add sugar and beat until stiff peaks form. Fold in the pecans and chocolate chips. Drop by teaspoonfuls onto a prepared cookie sheet. Put cookies into the preheated oven and turn off the oven, keeping the door shut. Do not open the door until the next morning (actually, you can--after the oven is completely cool--I did this because I have a gas oven, and I didn't want the cookies to get too dry from the heat from the pilot light).
