I think that it's in Spanish because of the high

number of Mediterranean Celiacs. Celiac is not

recognized and diagnosed as widely here in the US (it

should be). It may be a requirement to disclose if a

product contains gluten in certain countries with

Mediterranean descendants. It would be nice if we had

laws stating that!
