I've even had 2 gluten eating friends say these are good - you can't tell. I've modified it a little for the egg substitute. Peanut Butter Cookies 1 cup peanut butter 1 cup sugar 1 tsp baking powder 1 1/2 TBSP oil 1 tsp vanilla 3 1/2 TBSP water Combine peanut butter and sugar and baking powder; mix well. Stir in oil, vanilla, and water. Drop by spoonful on ungreased cookie sheet. Flatten with a fork. Bake at 350 for 12 minutes. Cool before removing from cookie sheet.
