Guest guest Posted June 25, 2001 Report Share Posted June 25, 2001 My dad called me last night with this recipe. He said it tasted really good and was pretty easy to do. He tried it with only one lemon and he said it would probably take 2 because he didn't have quite enough peel. He did say that he let the cake cool for a couple of hours and when he took it out of the pan it fell. He isn't sure if that is just what potato starch does, it was too humid, he didn't let it cool long enough, etc. It will take trial and experimentation, but the taste should make it worth it. Ingredients: 6 eggs (separated) 1 1/2 cups sifted sugar 1 1/2 tsp grated lemon peel 3 Tbsp lemon juice 1 1/4 cups potato starch flour 1/4 cup boiling water Directions: Put egg yolks in mixer and beat until light. Beat sugar in gradually. Add lemon peel and juice to boiling water and add to yolk/sugar mixture. Mix until thoroughly blended. Fold in potato flour. Beat egg whites until stiff peaks are formed. Fold gently into mixture. Place in ungreased 10 inch tube pan (angel food cake pan). Bake at 300 for 30 minutes. Increase heat to 350 and bake for 40 minutes more. Invert pan and allow to cool.
