Guest guest Posted July 16, 2004 Report Share Posted July 16, 2004 Hi again , We did the wheat/gluten free diet for 4 months while investigating Celiac Disease for Olivia. We never actually had the testing done since nothing changed while being on the diet, I will say however that her whole behaviour and demeaner changed for the better while she was wheat/gluton free so she may have some sort of intolerence. The died didn't affect her caloric intake though, before starting it you have to do a lot of research to find appropriate substitutions for wheat. Rice seems to be the easiest to start, keeping in mind that it's the carbs you need to replace the most. Beans are great too and there are so many great recipes for them, they're also quite cheap if you buy them dried and rehydrate them yourself. Garbanzo Beans are the highest in nutrition as they are the highest in proteins for the beans. They also taste pretty good too! Good luck with going wheat/gluten free, it's quite a challenge and a lifestyle change and puts a whole new spin on shopping! I did find that we all ate much more healthier though as I bought a whole lot more fresh fruit and vegetables, I put these down low so that Olivia could help herself whenever she wanted to. On a side note my friend has a son with autism and the wheat/gluten free diet has helped him tremendously.
