Guest guest Posted June 24, 2001 Report Share Posted June 24, 2001 We are still new to this diet, but I wanted to add something as to why (assuming these gf/cf kids could have butter...and possibly cream???) butter is better than ANY of it's substitutes, aside from cold pressed olive oil. I don't know if any of you have read a book called " Nourishing Traditions " by Sally Fallon, but it's amazing. In it she destroys, with science, the myth that animal fat is bad... specifically butter. She talks about why she thinks our present day MILK is causing so many allergies ...because it is mass produced and thus pasteurized killing all of the ENZYMES it naturally contains to help a human body DIGEST IT! Doesn't that make sense to those of us!! YES! Anyway, organic butter, preferably unpastuerized, (but she notes that pasturization is not so bad of an issue with butter as with straight milk)is the best most assimilatible source of vitamin A. Fallon's co author, a woman named Dr. Enig (who has specialized in studying FATS her whole career) wrote a LENGTHY chapter on fats/lipids and talks about why saturated fat like those in butter or that new spectrum palm oil shortening are GOOD why cold pressed virgin olive oil is GOOD and why most of the other polyunsaturated fats are not that great. Please by or borrow the book. The nutritional info is worth the price of $25. Whole Foods Mkts sell it as does Amazon. I am part of a Biodynamic/Organic food coop. We are able to get raw, unpasteurized yogurt...loaded with enzymes and natural probiotics!!! I can also get raw cultured butter, and raw ranch cheese. Because of federal laws tho we can't get the raw milk. However, over a year ago we went up the Farmer Hugh's farm and had Bambi's (his one and only cow which is GRASS fed...NOT GRAIN fed milk cow). It was a light butter color and SOOOOOOOO GOOD. I asked Hugh why it was so yellow and he said it was the vitamin A from the grass (rye, clover ). I wonder if the cows that don't produce this so called " bad casein " are pasture (ie:GRASS) fed cows. Maybe coz our kids shouldn't be eating certain grains, any milk products they ever had should not be coming from grain fed cows. BTW, cows really should just eat grass. Anyway, thought I'd just help " churn " this conversation up some more...no pun intended.LOL Oh, one more thing, any of you who are vegetarians should not read Fallon's book unless you are serious about someone really challenging your opinions regarding food. A friend of mine who's been a vegetarian for 10+ years is now eating beef, chicken etc after reading this book and feels better than she has in years.
