My house is a mess, my cabinets and drawers are a clutter, BUT I am

organized with my recipes!!!!!!!!!! I have a recipe folder on my compu.

here and also I print them all and have them in a looseleaf binder. I

will go through my stuff now and send you a few more.

OK, I just tried a recipe for pancakes that was p[osted back in March by

Misura2 and they were good. I made pancakes and waffles from it, but

only LJ eats these (I don't) so I had lots of batter and I decided to be

creative and VOILA I came up with a great dessert. I peeled and sliced

apples and put some cinnamon into the batter and coated the apples with

it and deep fried them in olive oil and THEY ARE SO GOOD. Here is the

recipe if anyone is interested. Also now I am going to cut the recipe

down , and down, and down in size and use this same batter to coat

chicken and fish - just add seasonings into it. I tried lots of coatings

before, and this is great.

2 cups sorghum flour

2/3 cup potato starch

1/3 cup tapioca flour

3 tablespoons sugar

2 teaspoons xanthan gum

1 tablespoon baking powder

touch of salt

Mix above well and set aside. In separate bowl mix:

2 cups water

1 cup milk sub

3 eggs

3 tablespoons oil

1/2 teaspoon vanilla

Combine with dry ingredients and cook on griddle until done.
