While I was at work I read a message from someone who warned about possible mixing for the frying vat oil thereby causing cross contamination. That brought on a revelation. Back in the 70's when I was just a wee lad I worked a Mc's for about 3 years. I was a closer and one of my jobs was cleaning the vats at night. We used a big bucket with a pump in it to clean and filter the oil. I would put the pump together using clean filter paper and drain the vats into it and pump the oil back into the vat. Now when I worked there we only fried 3 things in regular vats (not counting chicken which was a completely different beast), we fried french fries, apple pies and fish. Each was fried in it's own vat so there was no cross contamination there. However, if the apple pie or fish vat was cleaned before the fry vat then there would be a little bit of oil left in the bottom of the bucket that would contaminate the fry oil. Now when I worked there we were trained to clean the vats in the order of fries, apple then fish. However I can't sit here and say that I never got them out of order, especially when I was first starting. Also, we used to use a white powder in the bottom of the pump bucket. The powder went on top of the filter paper to help " polish " the oil. It basically filtered out some of the particles that the filter paper would miss. Now I'm sure that powder was completely harmless under normal circumstances. However, who knows if it was gluten free and I'll bet you would have a very hard time finding out. I can't speak for other fast food restaurants nor can I say how Mc's cleans the vats now. But they ARE cleaned and the potential for contamination is there. When we started the diet we switched from BK FF to Mc's because Mc's told use that their fries were gluten free and were cooked in there own vats. It never occurred to me about the possible contamination problem that could occur during the cleaning process. Mc's FF are the only fast food we eat anymore. Without them we will not be able to be away from home during meal time! I am really beginning to hate this diet!
