Either they come out where I practically crack my teeth on them, or they are fine looking and fine sounding (hollow) but raw in the middle. If I give up, are there any good pre-made breads that I could use? Also, does anyone have a good recipe for a millet-based bread? Someone told me millet is the most acceptable grain for low-carb diets. Thanks. I will try it, but I've never been good at making bread, even regular bread in the oven, even regular bread with a breadmaker. The only breads I've been successful with are cornbread and quick breads (which usually become muffins around here). Now, I am trying to limit soy, corn, and rice, here. I don't know about the soy, though--only the Tofutti products bother me with that. I've eaten tofu and soy cheese, and that didn't bother me. Maybe possible gluten in Tofutti? The Better Than Cream Cheese and their ice cream really does me in. Also, it looks like I may need to go milk-free, too. I keep getting sick from overt milk products; I keep thinking that I might feel better without any milk at all. One question--What brand of nut milk do you recommend (since I am trying to lower my carb intake as well)? I've heard of Naturally Almond and Blue Diamond's Almond Breeze. Also, coconut milk (I know it's not fortified, but it is yummy); I've used this for recipes. I learned 1:1 coconut milk/water for a drinkable consistency. As long as I take a multi-vitamin and calcium supplement daily, is this okay? Okay, a list of high-potassium foods that are not fruits or starches, if anyone has one. I know spinach is one (and I like that), but too much gives me bad poopies.
