( vomit/runs -- but I do get very dizzy and tired ) it is getting harder to say " no thank you " Wednesday was dh's birthday.. and I made him a no bake Cheesecake.. he loves those. Half is still sitting there... just mocking me... teasing me... have a piece... I would throw it away.. but dh wants some later.... I MUST resist..... bad sugar.. bad.... but ohhh sooo tasty!!!!!!!!!!!! Life is so much easier when this crap isn't in my fridge! Guest guest Posted July 30, 2004 Report Share Posted July 30, 2004 > I MUST resist..... bad sugar.. bad.... but ohhh sooo tasty!!!!!!!!!!!! > wonderful and easy (and VERY low sugar) no-bake cheesecake... take 2 blocks (8-oz each) of fat-free cream cheese (at room temperature works best but not necessary - Lucerne, the Safeway brand, works better than Philadelphia for some reason)....cream those with a hand mixer on low. add 3/4 cup to a cup of splenda pourable...cream together. add 1 tsp vanilla extract..cream together. add in 1 8-oz container of kool whip...NOT lite!...beat everything until creamy. Pour into a pre-made graham cracker crust...or if you really want to avoid that much sugar, just make your own crust or put down a layer of finely chopped nuts. Chill for about 5-10 minutes and enjoy. VARIATION: make cheesecake as I've said above, but don't pour it into the crust, just set it aside.. take a box of sugar free fat free chocolate instant pudding. add ONE cup of skim milk (instead of 2) and mix...before it gets too thick, add about a cup of the cheesecake mixture (don't need to measure..just eyeball it) and mix thoroughly. get out two premade crusts and fill each of them half way with the chocolate cheesecake mixture. top with the white cheesecake mixture and enjoy a two-layer chocolate cheesecake. If you want to get fancy...sprinkle chocolate chips on top for decoration...and call it a 2-layer chocolate-chocolate chip cheesecake. =) those were my made-up variations..and they are yummy. =) ENJOY!
