I'm sorry to hear the way that doctors treating your dad on pancreatitis. Even i have had acute pancreatitis and i've been staying in strict dietary restrictions to prevent its turn into Chronic. So, your dad should refrain from having fatty diets, alcohol (never, its more like poison now), avoid stresses. Besides, different people have different stories... some of us have came back to normal life forever after just one acute attack.. some have had more than one attack.. some are having more and more acute attacks ... and some are experiencing chronic pancreatitis with and some without pain. It really varies with the people, please check the stories section in PAI website, you'll get the differnet stories of differnet people.
