After his colonoscopy in sep, it indicated he still had gut inflammation, even after two years of gfcf. AND, he is now being treated for elevated yeast. It was suggested to me that my son should try SCD (in addition to gluten free, casein free, and salicylate free). BUT, the issue I have is that he is allergic to nuts (highly to peanuts). So, since it first appears to me that the flours used on this diet are primarily nut flours, what flours CAN I use for my son? ALSO, isn't block cheese used on this diet? After many months my son is tolerating some pecan butter now.(he is highly allergic to peanuts and most other nuts). In time your son may tolerate some nuts too. Until then, here is some ideas for baking... Make sure you check out the recipes at http://www.pecanbread.com/, this will give you lots of ideas for nut-free recipes. I use a lot of ground chicken/turkey for baking cupcakes, pancakes, cookies etc...pecanbread.com has some of these recipes. Can he have eggs? If you can have eggs there is an nutfree/dairyfree bread recipe in the files which can be used for sandwiches. I look forward to reading the recipes. My son is also allergic to egg yolks. He used to be allergic to egg whites, but grew out of that and tested negative for that recently.
