Nut free muffins

I am copying a post by Dana about Debbie's recipe.

Did you get the recipe a couple of weeks back for squash buttons by

Debbie Kirkland ( I think that is her name). It does not use any nut

flours and my boys just love it.

One large acorn squash cooked

2 eggs

1 tbs honey

a little cinnamon

Blend in food processor and pour small amount 1-2 tsp in well greased

mini muffin pan and bake on 300 degrees for 40 minutes

Her explanation is better than mine, but that is the gist of it. I

use muffin liners and they work just fine.

That would probably also be a way to get some good carbs in her.

Two different versions of this recipe have come out - one with 4

eggs and one with 2 eggs. I have made both and my kids love both.

If you need more protein, use 4 eggs. I personally think they are

easier to get out of the muffin tins and they are a tiny bit

fluffier.

Forgot another difference - the other recipe had a " pinch " of baking

soda, probably another reason for the fluffier nature of this recipe.
