Need Catsup recipe from Breaking the Vicious Cycle

I have misplaced my Breaking the Vicious Cycle (have ordered another

which will not come in for another week). I have purchased a case of

organic tomatoes and need to make the catsup today. Would someone on

the list be so king as to send me the recipe for catsup from the

Breaking the Vicious Cycle book.

The ketchup in BTVC is used with tomato juice so I don't know what the quantity

of tomatoes would be. I put a whole can of tomato juice in pan with 1/2 cup

vinegar and let boil until its ketchup consistency and then add 20% honey to it

and boil for 5 minutes more. voila! kethcup.

KETCHUP

2 cups tomato juice

1-3 tablespoons white vinagar

honey and/or saccharin to taste

bay leaf (optional)

salt and pepper to taste

Mix all ingredients except sweetener and simmer on stove until thick,

stirring often to prevent sticking.

When almost the desired thickness, add sweetner to taste and complete

cooking.

Ladle into sterilized jars and seal immediately or place in small

containers and freeze.

I just simmer tomato juice down to desired thickness, include a bay leaf and add

some

honey when it has cooled.
