Guest guest Posted April 24, 2007 Report Share Posted April 24, 2007 I have been engaged in some email dialogue with the CCFA because I perceived some inaccuracies in their SCD newsletter story last November. Various physicians and the author Debra Gordon made the comments which I am attempting to get corrected. So far they agreed to revise the " Low Calorie " tag attributed to SCD. http://www.ccfa.org/about/news/scd SCD is not a low calorie diet. SCD is not a low carbohydrate diet Our method of processing legumes prior to including them in recipes denatures the starch. We are not devoid of tasty foods and snacks just because we don't use much processed food. SCD is described as " difficult. " Is a diabetic diet " easy? " Their comments on short chain fatty acids refer to subjects who had a colectemy. I never saw a single post on our lists from one of these people. I am not trying to push for acceptance, endorsement or approval from CCFA but the comments were made by respected physicians who appeared not to have read BTVC or just made their own " presumptions. " Until there is more formal research they may never give SCD outright approval but incorrect negative perceptions could discourage people who may benefit from trying the diet. I did point out that a hearty SCD breakfast including : One almond butter pancake with honey and strawberries Three strips of bacon A banana yogurt smoothie has 619 calories and 70 grams of carbohydrate comprising 43% of the calories. (hardly a low calorie or low carb diet) So far they have agreed to retract the low calorie comments. We'll see if and how they address my other points. I did this because it was the one request Elaine reiterated several times to me before her passing. Carol F. Guest guest Posted April 24, 2007 Report Share Posted April 24, 2007 One largeor X-large egg 1 generously rounded tablespoon almond BUTTER A few drops of honey a tiny pinch of baking SODA (optional) 1 pat butter, or oil for frying pancake. Preheat a 6 " skillet. Combine ingredients, but reserve butter fand add to frying pan. Pour batter in and turn over when browned on underside and only slightly moist on top. Turn off heat as almond butter and honey brown fast. Serve with honey and berries, or yogurt and berries for topping. * This can be made in a waffle iron if desired. Carol F.
