I developed celiac disease seven years ago and was following The Specific Carbohydrate Diet (neither low carb nor low calorie) when I learned the fifty year old wholesome free diet was helping restore social and behavioral abilities in children on the Autism Disorder Spectrum. Despite lack of formal trials anecdotal evidence that the diet can help is impressive. I have archived many inspiring stories attesting to it. Thousands of ASD children have used various dietary interventions and there is strong evidence of the gut brain connection. Our diet excludes carbohydrates not easily digested as they then become food for bad intestinal bacteria. Although we cannot consume grain, starch, sugar, rice, corn, soy, liquid milk and some root vegetables, and use very few commercial products, our homemade food is fabulous. We bake with nut flour, sweeten with honey and leaven with baking soda. We make a killer lasagna using zucchini strips instead of pasta and you can't tell it from conventional. We also have pizza, ice cream. waffles, pancakes that you would not dream could be so good without grain. Our food is on the menu of the one of the best spas in North America. A new center is under construction where families can come, stay and learn more. There are hundreds of SCD compliant free recipes on the Internet and great cookbooks created for SCD. I co-conducted special cooking classes for six weeks over two years with the co-authors of Grain-Free Gourmet who have been making appearances in the U.S. We have parents who would appear on your show. I am 76 and unable to travel due to an environmental illness. I have no $$ interest in all of this and am just a volunteer sharing my support and experience with the diet.
