nut flour - we also have ? about pecan flour not finely ground

We are in the same boat as you, . I very excitedly ordered 23 pounds of

pecan flour (since my boys do not digest almond flour very well) and it came

looking more like pecan meal than flour (but it says it is flour). I made

muffins and they were a horrible texture and Garrett threw it up undigested

several hours later.

So, I need some suggestions for what to do with 23 pounds of not very finely

ground pecan flour.

I've had tremendous success with this " store " on all other purchases to date - I

was not mentioning the store's name so as not to bash them so to speak. I'm

sure they are only a middleman and not the grinder of the flours. I will

contact them right now but I'll still need to have a way to fine tune this

flour. I don't want to have to package it up and return it and all that

headache. Ours is not as course as meal per sey but still courser than the

last time. We did not like the pecan flour at all - maybe it was because it was

not as fine? Now I cannot remember - I was thinking it was the definate pecan

taste though.

I can't give you a suggestion on grinding the flour more finely, but I would

definitely contact the store.

I will often order nut meal because it is cheaper. I will then buzz it

in my food processor (I have a good quality Cuisinart) to make it

finer. I also will sometimes make nut butter by continuing to buzz it

longer and adding oil and salt.

Thank you - We will try the food processor - I think I'll try to sift it to

grind just the larger bits but not sure it will sift.
