Cocunut Flour/Saccharin

I have 2 food questions:

1. Has anyone ever tried making bread out of coconut flour? I saw it at

Whole Foods and it is cheaper than almond flour (especially if you

ground it yourself). I haven't seen any recipes for it, but maybe I

missed something?

2. What brand of saccharin is legal? The package of Sweet N Low listed

some stuff that I don't think is ok.

Any feedback would be appreciated!

alison, i've made coconut flour bread. it's pretty good. i actually

like it better than the nut breads. however, the recipes with coconut

flour use LOTS of eggs - like 6-8 for one loaf! there's a great book

by bruce fife, about baking with coconut flour. also, i've heard that

coconut flour is advanced. we've been on SCD for 4 months and are

just now getting ready to try it.
