SCD bean preparation

Can anyone tell me if it is OK to cook the SCD legal beans and lentels in the

crockpot? Of course, you soak, drain, and rinse according to BTVC instructions,

but what about the actual cooking? For some reason, it seems like I remember

someone telling me that you were not to slow cook them in the crockpot all day

for some reason or another. I seem to recall that it was Carol(who would

definitely know), and it was a totally understandable reson. I just don't know

if this really happened, or if I just think it did. I am wanting to make Cuban

black beans, but we have always done them in the crockpot in the past. Can

someone please help me out here?

Hmm...I don't think that the " stages " chart says that about the black beans. My

understanding was that they are an advanced food, and of course, to be pulled if

not tolerated. I thought lentels, navy beans, and black beans were all just

advanced. Not so?

Hi Meleah,

The stages chart doesn't *say* anything in particular but does

indicate that lentils, navy beans etc are for a stage of healing

that is before black beans and kidney beans. The additional info

about black beans comes from the BTVC and the BTVC.com legal/illegal

Thanks. I see that it says they are legal, and may be tried when symptom free.

Here's where it might get a bit more tricky then. Does that mean neurologically

symptom free as well a GI? My son has no GI symptoms, and hasn't for months.

His ASD is progressing very rapidly towards recovery. He still does have some

ASD characteristics though. However, he has shown no regression in GI or ASD

symptoms even when he has ingested an illegal food item. Does this count as

symptom free, or must we wait until he is completely cleared of his ASD

diagnosis as well? Thanks.

Since his bowel symptoms have cleared and his neurological symptoms

are improving you could cautiously try a small amount of properly

prepared black beans. But, I would only try black beans if he is okay

with the easier to digest legal legumes (lentils/navy beans etc.)

OK. Thanks. He is great with the legumes and navy beans, so maybe we'll give

some Cuban black beans a try...one of our old favorites, but minus the rice now

days.

Re. this discussion: So is it okay to make SCd-legal beans and just

put them in the crock pot after soaking?

I make chili from soaked beans on Friday afternoon and we eat it for

lunch the next afternoon. It has been coooked on low for about 20

hours. Do I need to boil these beans before putting them in the crock

pot, or is this amount of cooking enough? (I have been boiling them

for two hours prior to putting them in the crock pot, and would love

to eliminate a step in this very long process).

There is a recipe at scdrecipe.com for baked beANs in a crockpot.

It says that they are still cruchy in the crock pot.

If the beans are soft after cooking in the crockpot they should be

fine , but, you may need to bring them to a boil before placing them

in the crockpot to get them to soften. I cooked them once in the

crockpot and they never got soft.

Hmm...I've never had a problem with my beans softening up just the same as in a

pot on the stove when I did it before SCD days came along. A couple of things

that I have learned. You have to give them a good eight hours on slow in the

crockpot, and sometimes even longer. Secondly, you cannot add the salt until

the beans have reached the fully cooked point, or they will not ever soften. I

actually learned this in my human nutrition class in college about 12 years ago,

but I don't remember why this happens. It was explained why in the chemical or

scientific reasoning, but it has been so long that I can't remember. I just

knew that I'd experienced it prior to learning the trick, and never had the

problem again after I implemented the salt addition properly...at the end of

cooking.

It was a while ago, but my problem may have been that I had the slow

cooker on low heat.

That's a good note about the salt. I think Elaine mntioned that in

BTVC also.
