Guest guest Posted May 10, 2007 Report Share Posted May 10, 2007 OK. I found a fresh strawberry sorbet recipe on epicurious.com, and all I had to do to make it SCD legal was swap the sugar for honey. It is super delicious, and I bet you could do it with pretty much any fruit. We'll be making this all summer in various flavors. Remember, too, you can strain out the strawberry seeds(or any other berry seeds) after you puree the fruit. Here goes. Strawberry sorbet 1 cup water 1/2 cup honey 4 cups strawberries(hulled and quartered) 3 Tbsp. lime juice In a medium sauce pan, combine water and honey. Bring to boil over medium high heat, then reduce to simmer for five minutes. Place in refrigerator until cold. In a blender or food processer, puree strawberries until smooth. Add chilled simple syrup(honey and water mixture), and lime juice. Blend until just combined. Chill until cold(about an hour). Freeze in ice cream maker according to manufacturers instructions(mine was about 25 minutes). Transfer to storage container, and place in freezer. Enjoy.
