Instead of the rice bread for peanutbutter jelly sandwiches use this recipe

FLATBREAD RECIPE

1 1/2 cup mixed ground nuts

4 eggs

1/4 cup honey

1 tsp vanilla

1 tsp baking soda

1/2 tsp salt

Grind nuts in food processor. Remove nuts.

Blend all other ingredients in food processor until smooth.

Add ground nuts and blend again until smooth.

For pancakes, use 1/4 cup batter and prepare in hot, greased 7-inch skillet.

For flatbread, grease a jelly roll pan and pour batter into pan. Spread out

evenly.

Bake for 5 minutes at 350 degrees.

Instead of french toast use this recipe

Bread Crumbs

approx. 1/2 loaf of cheese bread (from BTVC)

fresh ground parsley

fresh ground basil

2 garlic cloves

1 small onion

2-3 strips of fried bacon (no sugars in the bacon)

parmesean cheese

paprika

oregeno

dry mustard powder

salt

black pepper

touch of cayenne pepper

-first cut bread into slices and toast until crunchy

-add bread and all other ingredients to food processor

-since mixture is moist (given the raw garlic and onion)

**- spread mixture on a cookie sheet and broil a couple minutes to dry out use

honey and butter or ghee for French Toast....

i've used this recipe to make delicious Chicken Fingers (which are great when

you have a craving for fried food)

-dip chicken breasts into egg and coat with crumbs

-serve with honey mustard sauce (I used the dry mustard powder)

Instead of gfcf cookies use this

CECILIA'S MACAROONS

4 large egg whites

1 cup honey

450 grams dessicated coconut

1. Beat the egg whites with an electric whisk, until very stiff.

2. Gently warm the honey until it becomes runny.

3. Drizzle the slightly warmed honey into the egg whites, while beating

continuously.

4. Gently fold in the other ingredients, then pipe or spoon the mixture in small

blobs onto a greased baking tray.

5. You do not need to actually BAKE them, instead you dry them out. Oven

temperature: 120 degrees Celsius, until the blobs are crisp and dry.

6. This will take a long time - at least an hour. Then turn off the oven and

allow the food to cool inside - this adds even more drying time.

COOKIE-CUTTER COOKIES

adapted from a pie-crust recipe at scdiet.org

3 cups almond flour, firmly packed

1 stick softened butter:OR 1/2 cup softened coconut butter OR Spectrum 100% palm

oil organic shortening

1 egg

1/2 - 2/3 cup honey

2 teaspoons vanilla

1/4 teaspoon salt (less if using salted butter)

raisins, sliced almonds, cut-up bits of dried fruit (optional)

shredded coconut for decorating (optional

Preheat oven to 300 degrees F. Cover a cookie sheet with baking parchment paper.

Combine all ingredients thoroughly to make a stiff dough. Chill dough several

hours or overnight. Place a ball of dough on the parchment, and cover with

another sheet of parchment. Roll out dough between sheets of parchment with a

rolling pin, until 3/16 " thick. Peel off top sheet of paper.

Using cookie cutters with open centers, cut shapes directly on the

parchment-covered cookie sheet. Press firmly. Keep close together as dough does

not spread while baking. Bake 5-10 minutes Watch carefully, edges brown quickly.

Remove and cool thoroughly to preserve shape before removing from parchment.

Tip: The parchment can be placed on any flat, smooth surface for rolling out the

dough, then carefully moved to the cookie sheet either before or after the

shapes are cut.

Vella's Strawberry Sherbet

1 egg white

1/2 lb (1/4 kg) strawberries

1/3-1/2 cup honey

juice of 1 lemon

Beat egg white until stiff. Mix strawberries, honey and lemon. Mix together

and beat for 20 minutes (it triples in bulk). Freeze.

DAIRY FREE ICE CREAMby Carol

5 frozen strawberries, slightly thawed

1 tablespoon SCD mayonnaise

a little water

honey to taste (1 teaspoon)

1 teaspoon crushed pecans

Combine first three ingredients in narrow container. process with hand blender.

Add pecans and extra honey if desired.

Coconut Ice Cream

I make a great ice cream using about 3 cups coconut milk, 2 eggs, honey, and

vanilla. Cook about 10 min. over low-med heat. Then I add a generous grating of

nutmeg, a bit of burbon (so the freezing texture isn't rock solid), and some

hazlenuts I previously roasted in a small quantity of oil. My daughter loves it!

Raspberries

Honey (to taste) Wash fresh raspberries very well. Use a sieve or food mill to

puree them.

Add honey, mix well and freeze in small popsicle molds. Freeze.

, if you try the Flatbread recipe that Grammy posted and it still

seems too different to your boy, try these modifications from Donna.

(Though I do agree with Meleah that you should probably go cold turkey.)

Donna's Flatbread modifications:

i use almond flour as my only nut flour. i put all liquid in blender

with the salt and vanilla and i use 1/2 the amount of baking soda.

....i find if i use 1/2 the amount of baking soda, the bread is

stronger and less likely to fall apart. i make sure i mix this in well

in the blender before adding in the almond flour. then i blend till

mixed and pour out onto a well greased jelly roll pan. i then bake

for 7-8 minutes until it looks like it is somewhere between beginning

to brown and going to burn. again play with the recipe till you like

it. i let it cool. then slice it. i then use a flat spatula to lift it

from the pan. then leaving the pieces as is, i put back in freezer

till frozen. when frozen you can keep it on the pan and use as you

like or combine in plastic freezer bag. then to use i put it in a

toaster oven for a lightl toasting. watch it so it doesnt burn. this

last toasting before i make a sandwich for kids for school takes out

the sticky icky texture that i find happens to scd baked goods after

taking out of freezer and gives it a little more strength. i take it

out of toaster and let cool on a wire rack before i make sandwich and

pack up or you will end up with condensation in the container and back

to mushy sticky icky.

what do i love about this recipe. it was the closest thing to a slice

of bread that i couldnt seem at achieve with a loaf recipe. and it

takes less than 15 minutes and made with ingredients i always have in

house. so i can even whip it up in the morning before school if

Our son was only eating a few items when we went cold turkey - meaning there is

nothing in our home he could possibly eat that is not SCD legal. We spent a

month cleaning out the cabinets with the goal of January 1 as the cut off date.

We never bought illegal items again, but we spent a month eating up what was

there and filling in with legal items, Then on January 1, I sacked up everything

left that was illegal and either threw it out or gave it away. I took it to

work and gave it all away if it was unopened and threw it out if it was opened.

I'm NOT suggesting you wait a month - just saying how we did it. But am

suggesting a 100% legal home to make it easier.

Our son is 12 with dyslexia and dysgraphia so a cleaned out home was the only

way to do it and we knew everyone would have to get healthy together to be

" fair " or he would call us on it in a minute and never give us any peace about

his food restrictions. It would have been a restriction to him if there were

foods about he was not allowed to have but we could have them - but doing it

this way makes it just a healthy way of eating for all of us.

He knew it was coming and did not resist or hold out for something else as there

was nothing else ;) Only one time did he have a melt down - about a week into

the diet he was crying and saying how there was nothing to eat, he even went to

his room & was lying between the bed and the wall. I loudly announced to his

dad " Well they say not to worry, as the longest anyone has ever held out was 9

days. " Within about 10 minutes our son was downstairs digging in the fridge

happy and laughing.

I love the little power battle story at the end of the post. I had a good laugh.

Way to stick it out! He is only better because you won that battle. :)

Thanks to all who responded to my post with ideas! I think going cold turkey

will be the way we will have to go. I'm going to try the flatbread today!!

Well it really was not the battle I expected - I was really girded for several

days with him as he once went 3 days without any food. He was at my sister's

and she did not have any of the few foods he would eat.

A doctor I highly respect told me " that's called fasting and humans do it all

the time for good health. "

There are still a lot of foods he will not eat but we'll see if it gets better.
