Guest guest Posted May 20, 2007 Report Share Posted May 20, 2007 Hello, I haven't posted in a while, but my son's been SCD now since December 26th and I've been following as much of the posts as I can. BUT, I came up with a new recipe today that my son really liked so I thought I would share it. He is still on a very limited diet, however he is starting to get interested in what my husband and I are eating for the first time. Probably because he is feeling better... so here's my fancy nachos resipe! Ingrediance: butternut squash nut butter or guacamole cubed chicken I cut the neck of a butternut squash in really thin circle slices, this was going to be pizzas, but turned into nachos. (We live in Texas.) Bake like squash fries, but for less time. Then I spread, macadamia butter or guacamole on them and sprinkle with cooked and cubed chicken. They look just like nachos and my son really liked them. Hope this will help someone else that is stuck on a limited food diet. Tricia, mom to Aidan, SCD 6 mths.
