Even if I soaked the beans for 12 hours and simmered them for two hours, they still would not be soft. The solution that works even on old beans is 1/4 to 1/2 teaspoon baking soda sprinkled right in the pot of beans as they are cooking. The water will foam a little but the beans will be wonderfully soft. If you use too much baking soda the beans will be mushy, good for pancakes but not bean soup. Ana K.
