The closest thing I can think of would be Spaghetti Squash to the Vermicelli

which I do not know about.

I also use steamed shredded cabbage as a noodle replacement when we want to have

tomato sauce (made with legal ingredients -- Digestive Wellness sells it

premade). I know cabbage is a bit advanced but it seems easier to digest than

spaghetti squash for us, since the squash is fibrous.

Zucchini noodles work really well, too. Just use a vegetable pealer to make the

noodles, and stop when you get down to the seeds. Saute them in olive oil or

butter until tender. They're very good.

I used enoki mushrooms once and my dd loved them. I made a stir fry with

toasted sesame oil and ginger as the main flavorings, and had it over a bed of

enoki mushrooms. They kind of look like pasta. Only downside is that it would

be pricey to get for a large group (i.e. my family of six!)
