Guest guest Posted May 29, 2007 Report Share Posted May 29, 2007 Hi: Can someone tell me the highest density vegetable in terms of the carbohydrate content? Most vegetables consist mostly of water. I would need to eat many cups of vegetables to get the same amount of carbs I get in once slice of regular white bread (which of course is SCD illegal). The problem with this is that you also get a lot of fiber which in me causes a lot of unwanted gas. So which vegetable has the most carbs as starch? I know a number of beans that are SCD legal are possible candidates, but are there any vegetables that can do the trick?
