Dripped Yogurt vs. undripped

Is one spoon of dripped yogurt the same as one spoon of undripped

yogurt? If I tolerate one spoon of dripped yogurt do I also tolerate

one spoon of undripped yogurt or vice versa?

No, you may or you may not tolerate the undripped yogurt. Some do and

some do not.

A cup and a half of SCD yogurt made with plain whole

milk has:

226 calories,

12 grams of fat,

17 of carbs

13 of protein.

If you drip it through a cheesecloth or paper

coffee filter the volume is about one third and the

nutrients remain the same..

One more question about yogurt. In the BTVC book on page 160, the

recipe of French Cream says to ferment 24-48 hrs. Can somebody tell

me, if I ferment it 24 hrs. all lactose is gone? What would be the

difference of hours fermentation?

By the way it is delicious!!!! But I will not give it to Anya until I

know the difference

No, they aren't the same. Dripping the yogurt will concentrate the

amount of bacteria, natural enzymes, calcium etc that is in 1

spoonful of yogurt.

Although you are mostly removing water when dripping it also removes

some of the galactose, and lactic acid making it easier for those

who have trouble with the galactose. Removing some of the lactic

acid makes it less tart.

On the other hand it does have a higher concentration of good

bacteria so just look out for a potential increase in die off

(especially if you are gradually increasing yog. amounts.

Is it OK to add some water to dripped yogurt? When I drip it too long I am not

alwayts in

the mood for such a thick texture and also the increased calorie density which

may be a

concern for the very few.

24-29 hours is good; just the same as regular yogurt. The french cream

recipe came from someone else ( Child?), but Elaine mentioned a

few years ago that it doesn't need to be fermented that long. You can

if you like - it may change the taste a bit, but the lactose is

fermented at 24 hrs.
