I found this bacon at Costco of all places, it's Kirkland brand Here are the ingredients: water, salt,sodium Phosphate, sodium erythorbate, sodium nitrate I know nitrates are supposed to be bad, I will have to look into that. The bacon with sugar fried crisply is what is for only once a week. Nitrates in foods do not make them either legal or illegal. It is not a SCD issue. It is similar to the issue of organic or not organic as the decision to use or not are up to an individual.
