Loblaws in Ontario has President's Choice and the deli counter will slice Fini from Italy for you. All are nitrate free. Whole Foods also carries a Prosciutto that is legal. I think it would mention nitrites if it had any. What you could do is have you sister buy it, and freeze it for a week(preferably in a deep freeze). Then, pack it in dry ice, and ship it over night with UPS. It would be expensive, but you could have her buy a lot if it is worth it for you to have the ham for your son. I roll that up secure with a dampened toothpick, squeeze on a bit of honey, dredge the roll in almond flour and bake on parchment paper in a 350 oven until the cheese bubbles and the almond flour begins to brown. Yikes! It was really expensive for just a few ounces, but that's OK. We'll just use it conservatively. Does it have to be cooked before eating, or is it already cooked? I know people mentioned frying it crisp like bacon, and you're talking about baking it in the oven. Is it necessary? Is it uncooked meat, or can I just roll it up with a piece of cheese or whatever, and give it to my kids as is?
