Yea I saw a brand at Trader Joe's that only has ham and salt has its

ingredients. The proscuitto is a Italian company from Milan but I forgot the

name. I'm going to Trader Joe's today so I'll find out.

Costco has one in Ontario. Loblaws in Ontario has President's Choice and the

deli counter

will slice Fini from Italy for you. All are nitrate free. Whole Foods also

carries a Prosciutto

that is legal.

If it is real Parma ham San e type it is only

smoked and has only salt. Nothing else. It is quite

expensive and very good. It must have a little crown

symbol

Unfortunately nothing like that seems to exist in my area and my ds

loves ham. So I have a question. Is this a refrigerated item when

first bought? If not, my sister lives near a Costco and could ship it

to us.

I get mine at my local food store Shop Rite. Only ingredients are ham and salt.

It's by Citterio. I think it would mention nitrites if it had any. And yes

it's in the refrigerator section with the imported cheeses and salami's at my

store.

Yes, I believe that it is refrigerated. What you could do is have you sister

buy it, and freeze it for a week(preferably in a deep freeze). Then, pack it in

dry ice, and ship it over night with UPS. It would be expensive, but you could

have her buy a lot if it is worth it for you to have the ham for your son.

The name of the brand of legal proscuitto is Citterio. It is soo good!!!

Can you cook it so it gets crips like bacon? My child will not eat a lunch

meat, but he does like bacon.

Yes, you can my boyfriend's very Italian grandmother does it all the time. It

takes sooooo good! :)

I lay the Prosciutto on a long slice of cheese and add Dijon mustard and capers.

I roll that

up secure with a dampened toothpick, squeeze on a bit of honey, dredge the roll

in

almond flour and bake on parchment paper in a 350 oven until the cheese bubbles

and

the almond flour begins to brown. This must be cooled for a few minutes to set

and so as

not to burn your tongue.

Thanks for this recipe, carol. I just stopped by the grocery store after Mass,

and they had the brand that every says they've found. Yikes! It was really

expensive for just a few ounces, but that's OK. We'll just use it

conservatively. Does it have to be cooked before eating, or is it already

cooked? I know people mentioned frying it crisp like bacon, and you're talking

about baking it in the oven. Is it necessary? Is it uncooked meat, or can I

just roll it up with a piece of cheese or whatever, and give it to my kids as

is?

No it doesn't need to be cooked. It's ham that was cured with salt.
