Guest guest Posted June 9, 2007 Report Share Posted June 9, 2007 I put " OT " in the subject in case this was a bit out of the scope of the diet for some folks, but I am still curious and didn't know where else to ask. I know the standard advice is to approach the diet very slowly, and my diet for the last 10 weeks has been fairly limited to meats, vegetables, and fruits. I am dairy-, egg-, and nut-free for the time being. Is it possible to over consume a single vegetable? I can eat several squash, or several pounds of carrots or green beans over the course of a week. Other vegetables (asparagus, spinach, etc.) that I have added to my diet so far are more so " complimentary " vegetables in my meals. I have heard dangers of vitamin A toxicity and am aware that carrots are quite high in it, thus wondering if I should be concerned or not that I'd be getting too much. I would imagine most of us would consume a large amount of vegetables, especially in early stages when options are limited, and carrots seeming to be one of the first vegetables one can try.
