I'd like to ask if anyone would be willing to email me privately and offer menu/recipe advice. I have an almost 4yr old ASD son and 6yr old daughter with bowel issues. I'd like to start this diet ASAP and am not the best cook by far. I could really use some help that could " ease " my kids into this diet quickly if that is possible. Meals (hopefully easily prepared) to get me started while I'm learning all the what not to eat/what to eat info in the book. He has yeast flare up again and I'd like to just switch cold turkey to SCD now and not get the Diflucan if possible. I'd probably need dessert/snack type items (cookies, etc) that would replace all the gf/cf stuff we have now. My girl especially has quite a sweet tooth and is a picky eater. I'm not very good with experimenting with recipes to find a winner. Also, can someone tell me how in the world to prepare frozen vegies (like green beans, etc) to where they could closely resemble canned food?? I've tried the frozen green beans and I can't get my kids to eat them. Texture and taste is way too different to fool them. My son has been on/off (mostly on) Diflucan for almost 2yrs now and I feel it is way past time to stop bandaiding the yeast issue. I can not express how grateful I am to any help given. I will say that I've never gotten my frozen veggies to resemble canned, and I don't think that it will happen. My kids still don't particularly love the green beans...at least the two who have had canned in their life...but I just make them eat the green beans anyway. There really isn't going to be much to replace for your daughter's sweet toooth in the early months of SCD. Cookies and cakes can be made with nut flours, but you will need to have some gut healing take place before you give them those foods. It's going to be a whole lot of pealed, seeded, and cooked vegetables and fruits with meats. In the first three months or so of SCD, we had a pretty boring diet. I did a lot of baked chicken with just salt and pepper or lemon juice(freshly squeezed) on it. I also grilled some fajita type chicken strips after marinating them in fresh lime jice, fresh garlic, olive oil, and cumin. This one probably came along about a month into SCD. We ate a lot of hamburger patties, too. I will say that the basic fruits that are fairly easy are ripe bananas, homemade applesauce(kind of a pain, so worth making a boat load at one time), and baked peaches(use the frozen ones so you don't ahve to peal them). Our veggies were pretty much steamed carrots, green beans, and either zucchini or yellow squash. We usually eat them plain. Like I said, it was pretty boring, but I'll tell you that it cleared up that yeast like nothing flat. We were able to start chelating as soon as we saw our DAN physician for the first time because he'd been SCD for three months, and we'd gotten rid of all of the yeast and nasty bacteria. I am a good cook, and was a fantastic cook with conventional foods. I didn't have time or money to waste on trying to figure out SCD foods though, so we just did it very basic for the first probably three to five months. Honestly, that is what I'd tell someone who also doesn't want to spend a lot of time and money figuring out stuff while they're trying to just get used to the changes of SCD cooking. There are a ton of great SCD recipes out there. You've got scdrecipe.com, the Grain Free Gourmet cookbook, and other things as well. I just found it easier on me to keep everything really simple and boring while I learned and became comfortable with the ins and outs of SCD. Hope this helps. Being new to SCD myself (and having to do the Intro again since I was too quick to cook the snacky stuff) I couldn't agree more with keeping it simple! One mistake I made the first time around was that I didn't regulate the volume on a food that my son liked. I figured that if it was 'SCD legal', it was OK to pig out on. I feel that it slowed his healing. This time around I've been trying to think in terms of percentages like 15% fruit, 35% protein, 50% vegies. I don't know if that's the right mix but it's helped me to keep the overload of applesauce and bananas in check! I've now gone to vegetable 'sauces' (peeled, deseeded, cooked and pureed with bone broth) to snack between meals. He doesn't always go for it but I'm determined not to give in this time to his incessant whining for peanut butter-applesauce-and bananas! Letting the diet do the healing.....
