Guest guest Posted June 16, 2007 Report Share Posted June 16, 2007 this is one of the few apricot chiken recipes i found that were free of packet french onion soup mix and dressings... it still is obviously not scd legal... it is from allrecipes.com (as are the others below) INGREDIENTS 1/2 cup apricot preserves 2 tablespoons soy sauce 1 tablespoon chicken broth or sherry 1 tablespoon vegetable oil 1 tablespoon cornstarch 1 teaspoon minced garlic 1/4 teaspoon ground ginger 1 pound boneless skinless chicken breasts, cut into strips 1 medium green pepper, chopped 1/2 cup salted cashews Hot cooked rice DIRECTIONS In a large bowl, combine the first seven ingredients. Add chicken and toss to coat. Transfer to a shallow microwave-safe dish. Cover and microwave on high for 3 minutes, stirring once. Add green pepper and cashews. Cover and microwave on high for 2-4 minutes or until chicken juices run clear, stirring once. Let stand for 3 minutes. Serve with rice. it is cooked in the microwave. i figure i can adapt to the crockpot easily enough. i was planning to use real apricot rather than jam - most other recipes use real apricot and packet soup and some type of dressing. here are a couple of examples - no #1 INGREDIENTS 12 chicken thighs 1 cup apricot preserves 1 cup French dressing 1 (1 ounce) package dry onion soup mix DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). In a medium bowl combine the jam, dressing and soup mix. Mix together. Place chicken pieces in a 9x13 inch baking dish. Pour apricot mixture over chicken and bake uncovered in the preheated oven for 50 to 60 minutes. no #2 INGREDIENTS 6 skinless, boneless chicken breast halves 1 1/2 (1 ounce) packages dry onion soup mix 1 (10 fluid ounce) bottle Russian-style salad dressing 1 cup apricot preserves DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Place the chicken pieces in a 4 quart casserole dish. Mix the soup mix, dressing and jam together, and pour over the chicken. Cover dish and bake for 1 hour in preheated oven. Guest guest Posted June 17, 2007 Report Share Posted June 17, 2007 OK. For the crockpot one, you could use sesame oil rather than soy sauce. I've done this before per suggestion of veteran SCD cooks. Use less than the recipe calls for of soy sauce though because sesame oil is pretty strong. You would use almond flour instead of corn starch. Apricot preserves...Well, I believe there is a jam recipe in BTVC and on scdrecipe.com. I know that Grain Free Gourmet cookbook has a strawberry jam recipe. Perhaps you could just substitute fresh apricots for the strawberries. As for the other two, I'm not sure. My advice for the apricot preserves would be the same. Make an SCD legal one of your own. I know that there is a French dressing recipe on scdrecipe.com. It is called Ann's French dressing. For the onion soup mix...My guess would be that Carol could help you figure out how to substitute that one. Have you become a member of the SCD Creators yahoo group?
