I am diabetic and understand about counting and reading labels, etc. So far, all I am able to eat is pototoes, rice and bread. I already have the malabsorbtion issues. I am just getting bored with spuds and rice. Though, I know I have no right to complain. I can not process proteins, and I can not do grains of any kind. I have gastroparisis. I guess I am just wondering if I need to just buck up and realize I will live on spuds and rice the rest of my life??? I only drink water at room temp and sometimes hot ginger tea. I can not do any dairy at all. People ask me about my weight too because I am 125. You'd think I would be skin and bones, but I am not. Dick, On the yahoogroups PAI website, there is a column on the left hand side of the page that shows all our features, such as Messages, Files, Photos, Links, Database, etc. If you click on " Files " , and then when the Files page opens, click on " Nutrition " , it will take you to a page where there's a file titled " Heidi's Diet Tips " . Read that through, it should give you several ideas of what you could eat besides zucchini. There are also a few recipes on the Nutrition page. CookingLight.com also has excellent recipes. Zucchini one of my favorite vegetables, and can be very versatile, but three times a day for 24/7 is too much!! With love, hope and prayers, Heidi Heidi H.
