I am so greatful for the wonderful people on these lists, with their patience, understanding, and willingness to share their knowledge and experiences. It is truly a welcome light that I see whenever I read e-mails from these SCD communities, one that shines brightly for all of us new folk trying to figure out our way to health again! Alright, to get to my question, I was hoping there'd be some lovely souls who were willing to type me up an " average day " for someone in stage 1 or 2 of the diet (according to pecanbread.com's stages). Perhaps you still remember what you yourself ate (or are still eating!). I am stuck right now after almost 3 months since restarting dairy-free (exception for butter), limited fruits (no more than 4 or so servings per day - I treat them as my snacks or desserts), and my veggies being carrots, squash, spinach, zucchini, green beans, asparagus, cucumber, tomato juice. I am trying for variety and decent rotation, but I can't seem to see how to make it work with only 8 veggies, unless I am eating cupfuls of a different veggie at every meal. I am being hounded by doctors regarding my low body weight, which has dropped even more since restarting =\ (I am not flaring.) I need to be consuming lots of calories, without overconsuming anything in particular (this includes fats). I fear maybe I don't understand how much to eat or something. I do aim to eat some fat and a good portion of protein at every meal. Any and all suggestions are very welcome! Thanks once again for reading and taking the time to respond! Since it is BBQ season I'll soon make a large batch of ketchup enough for a month or two and use some with burgers, squash fries, to make BBQ sauce etc.. Are you able to eat dairy? If yes, You could make some lasagna with DCCC, slices of zucchini as noodles, ground beef, sprinkle in some cheese. Spices Oregano, basil etc.. Cheese, mayo made with good oils, avocado etc. are good fat choices .
