I'm sooooo confused!!!

Hi All,

Sorry if I keep posting one question after another, but it seems just when I

think I've got it, I get confused over something else. I received a list of

others in NY who have been on the diet and are willing to help, but I am nowhere

close to any of them (I am waaaaay upstate). Since the website, the book, and

you all are my only resource, please bear with me.

At any rate, my most recent confusion is about yogurt and butter. We have been

GFCFSF for five months with great improvement. So, I never thought I'd even

consider introducing dairy again. I know pecanbread is the dairy free version of

SCD, but it seems everyone uses the homemade yogurt and butter. Is it realistic

to introduce these things even though being CF has helped us so much? If so,

should I only introduce the yogurt or butter too? When can I consider

introducing these things? I found no mention of introducing these things in the

" stages " section of pecanbread. We are currently in the very early stages of the

intro so I know it's a ways off, but I would like to have some idea of where we

are headed with this.

If you come to SCD dairy free, it is advised that you wait a couple of months

before trying the SCD goat yogurt. Once you do make a batch, you will want to

introduce it very, very slowly...like 1/8 tsp. per day or every other day to see

if it is tolerated.

Should you use butter? It depends if you want to experiment with

your child to see if he/she tolerates the small amount of casien in

the butter. Butter is mostly fat. Many of us clarify the butter to

remove the casien. Clarified butter is called ghee. You can buy it

in the health food stores, but homemade tastes and smells better.

You can search old posts or google for methods of making ghee. Many

who came from GFCF are still wary of ghee, but many are not.

It depends on your individual situation. Many (I'd even say most)

have found that introducing the yogurt has given a huge jump in

healing. The thing is you have to be ready to try it - both

mentally ready to try it and your child healed sufficiently to be

ready for it.

Again it depends on a number of factors. For those who were CF

preSCD it is a good idea to get established on the diet first and

get over the initial die off symptoms. This prevents people from

confusing die off associated with the yogurt with general die off

that can happen with starting the diet. For some people the

initial die off takes a long time, for others it is a short period

of time.

So, if you are not experiencing many die off symptoms and if you

have good bowels you could consider trying a small amount of yogurt

(1/8 -1/4tsp). Some people start with ghee (commercial or homemade).

The differences between traditional dairy (t.d.) and SCD yogurt:

1. t.d. has lactose and casein in its' harder to digest 3-

Dimensional state.

SCD yogurt is virtually lactose free and its' casein is denatured to

a substantially easier to digest 2-Dimensional state.

2. t.d. is pasteurized destroying the natural enzymes, SCD yogurt

has helpful enzymes in it made by the good bacteria.

3. t.d. : no good bacteria, SCD yogurt full of good bacteria that

actively heal the bowel and body. The good bacteria are protected

by the dairy and travel farther in the body to do more healing than

probiotics. Since SCD yogurt has very large amounts of good

bacteria even tiny amounts can deliver millions of good bacteria to

lower parts of the bowel. 1/8 tsp of SCD yogurt has about 2 billion

CFU's of good bacteria.

4. You have the option of goat yogurt which has an even smaller milk

protein for those who don't tolerate the larger milk proteins in cow

milk.

5. The calcium in SCD yogurt is more bioavailable so you'll get more

calcium out of SCD yogurt than T.D.
