I came truly paralyzed with fear! I knew the affects of casein on me and my kids. We are talking " rage attacks " ....it never happened with SCD diary. The yogurt did cause " die off " reaction that feels like the flu though. But this is different than " true allergy " or exorphine reaction. When we ferment the yogurt for 24 hours....it changes the molecular structure of the casein. In yogurt and in the natural cheeses, the casein is denatured into a two-dimensional structure which would be less likely to cause allergic reactions. Plus, if you use Goat instead of cow...this also decreases the risk of immune reaction or exorphine reaction. When we eat the cheese that are hard and a minimum of 30 day aged....the casein is denatured also. Goat Cheddar is often suggested to try first. I say go slow. As the leaky gut heals and the gut flora goes into a health state.....many of these strange sensitivities vanish. Antoinette and all my Silly Yaks at the Zoo. It seems that with each answer comes another question. So, here I go again. It seems like some people follow the pecanbread intro diet while others follow the breaking the vicious cycle intro diet. Is it a matter of preference or a matter of whether or not you came to the diet already GFCF? The BTVC diet seems a little more varied and consequently more enticing so I would love to use that one if at all possible (I think we could stay on it for the full five days with the cheesecake and yogurt being an option). However, we are coming to this diet after being GFCF (with much success) for several months so I'm guessing we should use the pecanbread version? Also, if we go with the pecanbread version of the intro diet, the way I understand it from your posts, the reading, websites, etc is that we wait until 2-3 months into the diet, or around the same time as introducing stage 3 foods, to introduce the yogurt and butter? That's what I've concluded thus far. I must admit I am really anxious to try the yogurt as we are really battling yeast and bacteria and I think getting rid of it once and for all will be the final step in 's recovery. Since the yogurt seems more powerful than any probiotic, I am definitely excited about the prospect of trying it it, but certainly not at the risk of ruining the benefits of the diet.
