Antoinette,

Did you start off using the yogurt and the cheese or did you work up to it?

I'm in the same boat...dairy makes my son CRAZY and aggressive! Before we went

GFCF, I actually had to strap my newborn too me with a sling for his safety. I

couldn't turn my back for a second. We went GFCF and now I can actually make a

quick trip to the bathroom without a baby attached which I consider pretty

exciting! Even though I've read about the denatured proteins, it's still a big

step for us. I want to make the very most of this diet so I'm really trying to

figure out the right route for us. Thanks for your response. :)

Many who come to the SCD solution who where GFCFSF do not realize

something totally cool about SCD dairy. I came truly paralyzed with fear! I knew

the affects of casein on me and my kids. We are talking " rage attacks " ....it

never happened with SCD diary. The yogurt did cause " die off " reaction that

feels like the flu though. But this is different than " true allergy " or

exorphine reaction.

When we ferment the yogurt for 24 hours....it changes the molecular structure of

the casein. Here is what Elaine said:

The Process of Making Yogurt Changes the Casein

From Elaine Gottschall:

When we make yogurt and the pH falls to about 4.5 rather than 7.1-2 (as in fluid

milk), the proteins are denatured which means that because of the acidity, the

proteins lose their 3 dimensional structure (sterochemistry) which would be the

reason allergists worry about casein. In yogurt and in the natural cheeses, the

casein is denatured into a two-dimensional structure which would be less likely

to cause allergic reactions.

Plus, if you use Goat instead of cow...this also decreases the risk of immune

reaction or exorphine reaction.

When we eat the cheese that are hard and a minimum of 30 day aged....the casein

is denatured also. Goat Cheddar is often suggested to try first.

I say go slow. As the leaky gut heals and the gut flora goes into a health

state.....many of these strange sensitivities vanish.
