Is there something I should know that makes raw eggs safe? Thanks in advance. It is either on scdrecipe.com or pecanbread.com, but I don't remember which of the two. I've never made it, so I can't vouch for its taste. Legal Mayo...Raw Egg? I used walnut oil though (can't tolerate safflower--only olive oil and walnut so far)...it came out liquid. Never fluffed up. Maybe that's normal since I've never made mayo before. I just pour it over whatever I'm eating. I may have used a little extra lemon juice because I didn't measure it (was close though). I think that a bad raw egg occurs 1% of the time, but you can recognize the bad egg and avoid it if you know what to look for. You significantly reduce your chances of ever finding a bad egg if you use a free-range egg. There are health benefits to raw eggs that you can't get from a cooked egg, so it's good to use them raw.
