I don't go by mercola based on issues Elaine had. But I did find this:

We are constantly misled about bacteria in our foods.

Bacteria (like salmonella) are naturally present in all foods. Bacteria are not

dangerous,

unless your defense system has been severely weakened. If you don't absorb such

bacteria

on a very regular basis, your defense will be weaker. Only if your defense is

exposed to

hostile bacteria often enough, will your body be well trained to overpower them.

Just think

of having a locally prepared diner in a far away, less developed country; you

may get

seriously ill, while the locals have no problems at all, with that same food,

simply because

their bodies are trained to fight the bacteria in that food.

We do fall into that category of the vulenerabel. Lucky me, using SCD mayo for

seven years

and never a problem. That doesn't mean it can't happen though!

I'm curious Carol about what Elaine had to say about Mercola. I find some of his

ideas

mirror my own, but he seems like such a snake-oil salesman, he doesn't endorse

anything

unless he can make a buck from it. Recently he was selling some kind of

" turbo-roaster "

and now he's talking (correctly, I think) about the dangers of high heat on

food. And look

at how many times he's changed his mind about raw egg whites and whether or not

there

is enough biotin in egg yolks to counteract the avidin in the egg white which

inhibits its

absorbtion.

I admire Elaine for having shared her information freely, and written a book to

inform, not

to make money.

Thanks for the link : )

A friend of mine who keeps chicken told me that info years ago. She

also said that your eggs will keep unrefrigerated if you have a rooster

(to fertilize them and keep the eggs alive). She was quite emphatic

about that. She used to bring me the eggs straight from the chickens -

they'd still be warm. Unfortunately, she moved.

Elaine asked me not to mention SCD in questioning him about celiac and gastric

diets as

he would latch on to SCD as if he thought of it.

Weil used to be my hero but i think he got commercial too.

Elaine was her own book distributor and used to schlep all the book orders to

the Cpbourg

post office until she had leg pain from the cancer before it was diagnosed. She

was in her

eighties at the time.

When I buy eggs from the co-op I belong to, they always tell me not to

refridgerate them. When I first started buying them I used to remember why, but

over the years I forgot. I remember that if you get the right kind of eggs, it

is actually better to keep them on the counter.
